Zucchini Fritters with Lemon and Sea Salt

Introduction:
Ingredients:
1 grated zucchini
2 egg yolks
2 tablespoons all-purpose flour
3 lemons zested
1 minced shallot
1 clove minced garlic
5 tablespoons crumbled feta
1 cup olive oil
salt and pepper to taste
Instructions:
Mix zucchini, egg yolks, lemon zest, shallot, garlic and 3 tablespoons of feta. Season to taste. Fold in flour. Heat oil in deep skillet to 365 degrees. Spoon 1 tablespoon portions of batter into oil and fry for 2 minutes per side. Drain on paper towels. Place on plate and garnish with dill and remaining feta.
