Sweet Lemon Ricotta

Introduction:
Ingredients:
3 cups fresh homestyle ricotta cheese
1/2 pint strawberries (hulled)
1/2 pint raspberries
1/2 pint blackberries
1/2 pint blueberries
1/4 cup powdered sugar
Zest of one lemon
Store-bought almond or chocolate biscotti
Mint Sprigs
Instructions:
Begin by making the mixed-berry compote. Place half of the contents of each berry container into a medium-sized pot. Macerate the berries by sprinkling them with 1/2 of the sugar and placing in a pan over low heat. Allow the berries to meld together for 8 to 10 minutes in the pan. Shut off the heat and fold in the remaining berries.
Thoroughly mix the remaining sugar with the lemon zest into the ricotta cheese.
To serve, place ricotta into a dish, pour berry compote over ricotta. Sprinkle on lemon zest and mint sprigs. Place biscotti on the side and serve.
