Holiday Brussels Sprouts

Introduction:
Cleveland's own 'Iron Chef' presents this fabulous recipe....
Ingredients:
1 pound brussels sprouts, cored, quartered and blanched
1/4 pound slab bacon, diced
1 clove garlic, minced
1 shallot, minced
1/2 cup pecans, chopped
2 Tbsp. grain or stadium mustard
4 oz. chicken stock
1 lemon, juiced
2 Tbsp. butter
1 Tbsp. chopped flatleaf parsley
Instructions:
Heat half of butter over medium heat and and caramelize sprouts for 3
minutes. In a separate pan, crisp bacon for 3 minutes. Add pecans, garlic and
shallots and continue to cook over medium heat for 1 minute. Deglaze pan with stock
and lemon juice. Whisk in butter, mustard and parsley and toss with cooked
sprouts.
