Brian Doyle is a culinary multi-tasker. Working as a personal chef through his company World’s Fare Culinary Services, the Brunswick resident does in-home meal preparation and food for private parties, as well as cooking demos and classes. In 2007 he introduced his new line of all natural sauces marketed under name Chameleon Chef at the Fabulous Food Show. He’s also the chef at Good Taste Market in Medina.

 
His 20 year career started at Penn State University where he got his formal training, and continued at such local restaurants as Lure, Fulton Bar and Grill, Jack's Steak House.

 
Drawing on world flavors, Doyle’s known for the global flair he brings to all his food.
Among his out-of-the-kitchen accomplishments are co-founding the Chili Cook-off for Autism, and assisting Cuyahoga Community College in the design and implementation of the school’s Community Cooking Classes.


Fabulous Food Show: When did you know you wanted to cook professionally?
Brian Doyle: I was seven years old. Helping Grandma in the kitchen.


FFS: What is it that got you "hooked" on this crazy profession?
BD: The drive for me comes from making people happy with my craft.


FFS: Of all the things you're doing now, what's your favorite part of the job, the moment when you're glad you do what you do?
BD: Again, knowing that folks enjoy my cooking and hearing them express their enjoyment in the dinning experience.


FFS: Have you got one bit of advice for home cooks?
BD: Food Tastes better when someone else makes it! LOL!


FFS: 5 great ingredients home cooks should keep on hand?
BD:
Salt- you have to be able to bring out the flavors of a dish.
Pepper- another enhancement for the dish.
Butter- adds body, soul and satisfaction.
Nutmeg- perhaps my favorite spice of all. A little goes a long way in a dish,. ie: mashed potatoes.
Tomatoes- a very versatile fruit/veg that has acid, texture, tartness, sweetness. They can brighten any sauce, soup or heavy rich dish, be used as a marinade, or be added raw to a dish. The possibilities are endless.



FFS: 3 kitchen tools/gadgets/accessories every home cook should have?
BD:
Hand blender- My favorite tool in the kitchen. You can make mayonnaise, puree soups, sauces, batters, etc.
Knife- you would have a hard time without it.
Tongs- indispensable.


FFS: It's your day off. What's your idea of the perfect meal to have at home?
BD: My dad's Bolognese sauce, escarole soup, fresh Italian bread, tall glass of cold milk, dandelion salad. All from my childhood. All shared with loved ones. My children, wife, parents, etc.
